Matching Sushi with Wine
Delicate flavours of the fish need to be balanced with a delicate wines that are light or medium bodied. Wasabi, once thought of as a wine killer, is now considered like any other spice and simply needs to be tamed by the wine. Fresh fruity wines such as those produced in New Zealand and Northern Italy are great choices. Dry Roses with balanced acidity compliment the inter muscular fats of Salmon as well as Roe, Maguro and Uni. Earthy Reds make a great union with the elemental essence created by the sea. Try a medium bodied Pinot Noir, Malbec or Chianti for a wonderful pairing. Please experiment!
